Veal Parmigiana

Cooking time: 45 minutes
Serves 4

Ingredients
4 Veal Scallopini
2 tablespoons flour 30ml
1 egg, beaten
½ teaspoon paprika 2ml
1 cup breadcrumbs 250ml
to taste: salt & pepper
½ cup Parmesan Cheese 125ml
8 thin slices of Mozzarella Cheese
1 onion, chopped
1 clove of garlic, chopped
1½ cup tomatoes, chopped 375ml

Directions
To make sauce first, heat 1 tablespoon of olive oil and soften onion and garlic.
Add tomatoes, salt and pepper and simmer covered for 15 minutes, uncover and simmer for 15 minutes.
Mix flour with paprika, egg and coat the Scallopini.
Pat on the breadcrumbs with Parmesan.
Heat the remaining olive oil in skillet and fry the Scallopini 2 minutes on each side.
Lay them in a casserole and pour over sauce.
Cover with the mozzarella and bake for 15 minutes at 350ºF. (176ºC)
