Veal Marsala
Serves 6
Ingredients
12 Veal Cutlets
flour
butter
1½ lb sliced Portobello mushrooms
2 tablespoons chopped chives
1½ cups beef broth
¾ cup Marsala wine
paprika, salt, pepper
Directions
Dust slices with flour.
Sauté quickly 3-4 slices at a time in butter, until brown.
Transfer slices to a baking dish, sprinkle with paprika.
Add more butter if necessary and repeat process with the rest of the cutlets.
Melt more butter, add mushrooms and sauté about 5 minutes.
Add chives, parsley, salt, pepper, beef broth, and Marsala.
Simmer 5 minutes.
Pour over Veal slices.
Bake at 350°F for 30 minutes
