Veal kidneys are a good source of protein, vitamin A, iron and phosphorus. They are rich and delicate, with a clean taste, certainly one of the easier organ meats to love.
Veal kidneys go well served with with garlic, onions, mustard, mushrooms, toast, and tomatoes.
They are most prized in France, and they are usually quickly grilled or sauteed. Beef kidneys, although very inexpensive, are rarely used.
