Veal Loin chop
Cut from a veal loin roast, the veal loin chop is the veal equivalent of a Porterhouse or T-bone steak. They are delicious either braised or pan-fried. The most buttery, tender of all veal cuts, veal loin roasts are not cheap, but well worth the top dollar.
- The inclusion of tenderloin separates this chop from a veal rib chop. The size of the chops gets less as the chops near the rib.
- Veal loin chops are also among the leanest cuts in veal, along with top round, leg cutlet, arm steak, and rib chops.
- Many people are not aware that veal, though higher priced per pound, has very little waste on it.

Veal Rib chops
Veal Rib Chops are cut from Veal Rib Roast straight from the rack. Veal Rib Chops can be purchased in either bone in or boneless form. Veal Rib Chops are known for their delicate flavor and tenderness. Most people prefer milk fed to grain for the meat is said to be unequivocally tender. For the most part, Veal Rib Chops are cooked by either braising or pan-frying.
A Veal Chop can be safely refrigerated between 3-5 days and may be frozen between 4-6 months without sacrificing quality.
For best browning methods of a Veal Chop, forego rinsing your meat, it won’t brown well if wet.
To safely defrost a Veal Chop, there are three methods you may use;
- the cold water method,
- in the microwave,
- and in the refrigerator.
To defrost a Veal Chop in cold water, place the Veal Chop and the packaging into a bowl of cold water and leave until thawed. Continually change the cold water until the veal chop is thawed.
