Oxford Sausages recipe - using veal and pork

Ingredients
8 slices white bread, in small crumbs
¾ lb ground pork
¾ lb ground veal
2 teaspoons grated lemon rind
¼ cup lemon juice
1 teaspoon sage
½ teaspoon black pepper
salt to taste

Directions
Mix all ingredients together in a large bowl, kneading with your hands until throughly combined.
Divide into 8 portions and roll into sausage shapes.
Place sausages on baking sheet and bake for 10 minutes, until browned.
If you’re unconcerned about cholesterol, you can also brown them in butter or some other fat, as per the 18th Century.
